I have many things to be thankful for but the the number one is my family. I believe family is the most powerful fuel for your soul and  the best medicine when things are not as good as you would like them to be.

So from the bottom of my heart I wish you and your family the best for this New Year 2012 !!!

Tengo muchas cosas por las cuales estar agradecida pero la numero uno es mi familia. Creo firmemente que la familia es la energia mas poderosa para tu alma y la mejor medicina cuando las cosas no estan tan bien como desearias.

Merry Christmas and blessings to all of you that follow my blog. 2011 has been a wonderful year but for me it just went too fast. My last post was for Thanksgiving and after that I got really busy and  suddenly we are on our way to a New Year. In between the holidays, I manage to make this Christmas cookies. Feliz Navidad a todos ustedes que siguen mi blog. 2011 ha sido un año maravilloso pero para mi simplemente se fue demasiado rapido. Pinwheels and Flowers Cupcakes – Bollitos y galletas de Reguiletes y flores

Well finally I’m back . . . my inspiration came back a few days ago when some friends invited us for a picnic.  Didn’t know what to make so I remember an edible image that I get from my Cake Club. It was in a package that didn’t allow me to see through (maybe that’s the reason why was still there) so I open it, look at it and pinwheels came to my mind, so here they are . . .   Finalmente estoy de regreso . . .mi inspiracion regreso hace unos dias cuando unos amigos nos invitaron a una reunion en su alberca. No sabia que hacer y recorde que tenia una imagen comestible (tatoo para pasteles) que me regalaron en mi club de pasteleros. Estaba en un paquete platinado que no me permitia verla (probablemente esa es la razon por la que todavia estaba ahi) asi que la abri, la vi y lo primero que me vino a la mente fueron reguiletes, asi que aqui los tienen . . .

I wanted to make cookies to match the theme but didn’t have time to decorate them with royal icing so I colored the dough instead and make these Pinwheel cookies Queria hacer galletas que combinaran con el tema pero no tenia tiempo de decorarlas con merengue royal asi que solo puse colorante en la masa para hacer estas galletas de reguilete.

Fondant vs. buttercream – Fondant vs. Betun

Which one is better? Well that is a personal choice. Of course fondant is trendy thanks to all those TV shows about beautiful fondant cakes but a lot of us haven’t even try it yet. I always feel weird when somebody that have never try it ask me about the flavor or taste of fondant. Some people think that it taste as good as it look and that is far from the true at least in my opinion. Cual es mejor? bueno esa es una decision personal. Porsupuesto que el fondant esta de moda gracias a todos los programas de TV donde crean esos hermosos pasteles de fondant, pero la gran mayoria de nosotros ni siquiera lo hemos probado todavia. Siempre me siento rara cuando alguien que no lo ha probado me pregunta cual es el sabor, o a que sabe el fondant. Algunas personas creen que sabe tan bien como se ve y eso esta bastante alejado de la realidad al menos en mi opinion.

I just say “is too sweet for you to actually eat it and is nothing like buttercream” and I finish my explanation telling them that most of the people choose to live it in their plates and only eat the actual cake and the buttercream inside the beautiful fondant decorated cake.  Solo les digo “es demasiado dulce para que puedas comertelo y no se parece en nada a un betun de mantequilla” y termino mi explicacion diciendoles que la mayoria de las personas deciden dejarlo en sus platos y que solo se comen el pastel y el betun que esta adentro del hermoso pastel decorado con fondant.

Is somehow difficult to understand if you consider that fondant is really pricy,  but in the opposite side the look of the cake covered with it is worthy . . .  well most of the time. Es algo dificil de entender considerando que el fondant es algo caro, pero por otro lado lo hermoso que hace lucir al pastel no tiene precio . . . bueno la mayoria de la veces.

Anyway I was glad to find a more straight and detail answer to use next time somebody ask me – How fondant taste?. It came from Duff Goldman from Ace of Cakes in his book “Inside the world of Charm City Cakes” and I’m totally with him on this matter: De cualquier forma estoy muy contenta porque encontre una respuesta mas directa y detallada que usare la proxima vez que alguien me pregunte – A que sabe el fondant? Proviene de Duff Goldman de Ace of Cakes en su libro “Dentro del mundo de Charm City Cakes” y estoy totalmente de acuerdo con el en este asunto:

Q. What is the deal with fondant? Pregunta. Cual es el trato/asunto con el fondant?

A: Though fondant is edible, the point isn’t to put it in your mouth. Our cakes are designed so that the fondant seals in the freshness and preserves the cake and icing underneath. Think of fondant as a thick, dense coating that’s meant to be peeled off like a banana skin; you want what’s underneath. That’s not to say you can’t eat it – it’s just that it’s pure sugar. Respuesta. Aunque el fondant es comestible, el punto no es ponerlo en tu boca. Nuestros pasteles estan diseñados para que el fondant selle for dentro la frescura y preserve el pastel y el betun debajo de el. Piensen en el fondant como una cobertura densa y gruesa que debe ser pelada como una cascara de platano; lo que quieres es lo que esta debajo. Esto no significa que no te lo puedas comer – es solamente que es pura azucar.

Fondant cakes are in my opinion for special celebrations that’s why you want that extraordinary look. En mi opinion los pasteles de fondant son para celebraciones super especiales que es la razon por la que buscas ese look extraordinario.

So if you don’t want to spend a lot of money in commercial brand fondants but want to make a special cake, try this homemade fondant recipe I have been using lately. Is not only easier in your wallet but it tastes a lot better (you can infuse it with the extract of your choice just has to be clear – usually vanilla or almond, but my personal favorites include coconut, raspberry, lemon and orange). Si no quieren gastar mucho dinero comprando fondant de marcas comerciales pero quieren hacer un pastel muy especial, prueben esta receta de fondant que he estado usando ultimamente. No solamente es mejor para sus bolsillos sino que tambien sabe muchisimo mejor (ustedes pueden ponerle el sabor que mas les guste con el extracto de su preferencia solo que sea transparente – usualmente vainilla con almendra, pero mis favoritos incluyen coco, frambuesa, limon y naranja.)

Of course the inside is very important. Every single fondant cake has some kind of frosting inside, that is the yummy part. Professional bakers usually covered their cakes with chocolate ganache because it creates strait lines that will make the fondant look perfect, but normal buttercream, italian or swiss meringue buttercream can also be used under fondant. Other less stable frosting like whipped cream are not recommended. Por supuesto lo de adentro es muy importante. Todos los pasteles de fondant tienen algun tipo de betun adentro, esa es la parte rica. Los pasteleros profesionales generalmente cubren sus pasteles con ganache de chocolate (chocolate derretido combinado con crema) porque crea orillas muy derechas que haran que el fondant luzca perfecto, pero betun de mantequillla, o betun de merengue italiano o suizo tambien pueden ser usados debajo de fondant. Otros betunes menos estables como la crema batida no son recomendables.

And we better don’t talk right now about the cake itself because we will never finish. Hope you get inspired and start baking a yummy cake for a love one, doesn’t matter if it is buttercream or fondant. Y mejor ahorita ni hablamos del pastel mismo porque nunca acabariamos. Solo espero que se hayan inspirado y empiecen a hornear un delicioso pastel para alguien muy querido no importa si es de fondant o solo de betun.

Happy Mother’s Day /Edible Images – Feliz Dia de las Madres /Imagines comestibles

Happy Mothers’ Day !!! I know is kind of late but in Mexico the celebration is today. I just want to send a big hug and say thank you to my Mom that has been always there for me. Feliz Dia de Las Madres !!! Ya se que es medio tarde pero en Mexico la celebracion es hoy. Yo aprovecho para mandarle un abrazo enorme y decirle gracias a mi Mama que siempre ha estado ahi para mi.

Happy Easter and happy me !!! – Felices Pascuas y felicidades a mi!!!

I’m super happy because #1 is Easter and #2 because my Fiesta San Antonio Easter Cookies and my Bunnies and Chicks cookies – were featured in The Sweet Adventures of SugarBelle blog. For those of you that don’t know SugarBelle – she is one of the most talented decorated cookie artist – and I mean super talented. So for me is an honor to be in her blog, just amazing !!! “Enchanted Garden” Exhibition Cake – Pastel de Exhibicion “Jardin Encantado”

This is my exhibition cake for the Annual Day of Sharing organized by the “Frosting Creators of San Antonio” Club.  I’m a proud new member of the club which is open to all kind of bakers and sugar artist with all levels of experience. Members of the Club were invited to create a dummy cake to be displayed during the event as an example of what we can do with sugar. The Day of Sharing will be next May 1st. and they will have demonstrations from very well known sugar artists like Debbie Brown consider UK’s best-selling author of character and novelty cake books and Denise Talbot that have compete in TLC Ultimate Cake off Challenge, of course they will also have cake supply vendors, raffle tickets and cake displays. I’m very excited because I just discover the association and is the first time that I will be attending the event.

Gum Paste Wilton’s Recipe – Receta Wilton para Pasta de azucar

In my opinion this is a very cheap, easy to make and work with Gum paste recipe. Is from Wilton’s Gumpaste flowers book. It dries really fast so I like to use it for intricate figurines or shapes like hair or dresses. I have another recipe for gum paste that is more elastic and maybe is better to make flowers but it doesn’t dry as fast. Continue reading
